The flavor is balance and pronounced like tropical fruits. Acidity and sweetness become more pronounced at cold temperatures with smoother body texture. The combination between Typica & Bourbon makes this coffee delicate and balance.
This particular lot applied a mixture of different post harvest processing methods and blended green coffees to add new layers to its flavor profile. Then placed in fermentation tanks to be inoculated, in this case utilising Klebsiella p. bacteria, lactic acid bacteria (LAB) and Saccharomyces cerevisiae yeast before sealing the tanks to let the coffee ferment for a few days. Dried on raised beds for around 2 weeks, then parchment rests for 1 month before dry hulling and the final sorting process.
