Finca Nuguo is located in Santa Clara, Chiriquí, Panamá. The farm produces some of the world’s highest quality coffee that you can get.
José Gallardo came from the Gallardo family that have been involved in coffee production since 1960. He meticulously takes care of everything that happens in Finca Nuguo.
This lot was harvested at 30th of March with his “Nuguo Perfecto” method. This picking only use fully ripen cherries with 100% red colour meaning there’s not even a single streak of green, yellow, & pale red on the cherry skin.
Then “Nuguo Perfecto” cherries are vacuum sealed 1 kg each & put in sealed tanks for 7 days maintaining the cherries temperature at 22-23°C. The cherries were then taken out on 1st May to dry thinly on bed with high airflow at 30°C & below 90% relative humidity for 2 weeks. Next, it was continued to dry at 24°C & 55-60% relative humidity with natural airflow for 11 days, making the total drying time 25 days.
When we cupped we found Lavender, Blackcurrant Compote, & Blueberries also silky body at hot. Finally, when it cools down, you can get complexity nuance like Jasmine & Black Autumn Grapes.
